Bolt Stage                                             

Jim Martell, Canyon County Noxious Weed Control Superintendent, and Roger Batt are standing in Perennial Pepperweed in the bolt stage. Jim explains that this mustard invades pastures and non crop areas in Canyon County. He pulls up a plants and states that it is a deep rooted perennial with a large creeping root that is very difficult to remove. If the root is cut, it will reproduce and send up new plants, which creates a problem when you try to control this weed. He points to the root and says, you can see how this plant has regrown from last year out of the same root. He shows the old stems and the new stems. Roger asks if there is a reason that it is called pepperweed - if it smells like pepper? Jim smells the root and states "I smell sugar beets". Jim says in Nevada they call this tall whitetop. When this gets about 4 or 5 feet tall it puts on a canopy of white flowers and you can confuse it with Poison Hemlock or Hoary Cress whitetop.
